Sweet potato fruit bowl | Vegan

Our sweet potato bowl is a multifaceted dish. While tradition serves sweet potatoes as a side dish, adding in some fresh blueberries, agave, and cinnamon makes this a leisurely post-thanksgiving breakfast.

   Sweet potatoes are such a staple in the Thanksgiving dinner menu. They can hit every section, in sever always, and leave everyone satisfied. I haven't been a fan of them for long, but after some experimentation, I have slowly integrated them into my diet. A rich source of antioxidants, iron, and selenium, sweet potatoes are considered a superfood, aiding in digestion and defending the body against free radicals known to cause illness.

We kept most of the nutrients in the potato by boiling them whole. While it does take long, man was it worth the wait!! After cooking,we peeled and cubed the potatoes, then topped them with fruit and a little nut butter sauce, and popped them back in the oven to entangle the flavors.

The sauce made for the perfect mid-cooking snack served with apples, bananas, and pears.

At this point, Antwan decided to have a small mash-em-up derby and folded the fruit, nut butter sauce, and potatoes together,resulting in a sweet yet nutty mash blend. Dress it up with slices of banana,apple, and chopped nuts or store it away for a quick breakfast. I've added blueberries, coconut flakes, and honey in the morning for a potato porridge that did not disappoint!
