For this year's Friendsgiving, we skipped the turkey and went with a winter squash, similarly known as a butternut squash.
This plant-based lifestyle has introduced so many veggies I, as a 30-year-old woman, have never had. I started a relationship with winter veggies like beets, brussel sprouts, and winter squash in late 2017 and haven't turned back since. Sure, trial and error with different recipes, but roast any of these veggies and dress them in a simple herb, S&P, oil mix, and you will be amazed!!

This badass veggie is an excellent source of fiber, potassium, and vitamins A, C,and E. Adding some into your diet has been known to aid in digestion, lower blood pressure, and reduce inflammation. Flush with antioxidants, including this in your daily meal plan, can help with healthy skin and hair!
Our roasting king Marcel made sure to keep the nutrients in the squash by roasting it whole. He glided around the kitchen with ease as he added simple herb seasonings to beets, and Brussel sprouts and tossed those in the oven as well. Topping the squash with grounding vegetables brings about a sense of grounding and comfort, much like the men dominating the kitchen right now.
Our resulting dish full of yellows, greens, and orange vegetables helps fight against common colds and illness, diabetes, and mental decline. What better way to enhance those memories from the 1995 family reunion in Miami than with veggies?! Lol. I made a quick berry compote to drizzle atop the squash and bang bang!!
